Vegetable Pie
SERVES 4
1/4 Cabbage diced
6 medium potatoes diced
2 carrots diced
1 large onion chopped finely
500g Mince
3 tbspns Tomato paste
1 1/2 tins minted mushy peas or fresh peas and chopped mintSalt & pepper
A little curry powder
Boil then roughly mash the diced vegetables. Fry the onion then add the mince and cook through. Add the tomato paste and mix through the add the cooked vegetables and peas. Season and add the curry powder and cook through.

Line a baking dish with puff pastry, add the filling then cover with more pastry. Puncture the top with a fork and glaze with a little milk or water and cook in a moderate oven until golden brown.

Note: Make into smaller pastries if desired.

Potato Pie
SERVES 4
8-10 Potatoes
Bacon
3 eggs
2 hard-boiled eggs
salt and pepper
puff pastry to cover dish
margarine/butter
Boil the potatoes in seasoned water. When well cooked, mash the potatoes adding 1 egg and some margarine.

Line the baking dish with pastry and add half the mashed potato. Coat the layer with 1 beaten egg and 90% of the bacon and 1 hard-boiled egg. Add the rest of the mashed potato, then cover with the remaining bacon, hard-boiled egg and lastly the remaining beaten egg.

Fold the excess pastry onto the dish and cook on the bottom oven shelf at 180oC until golden brown.

Rice in the oven

Serves 4

1 1/2 cups rice
1 large onion
500g minced meat
1/2 tin corned beef
3 tbsp tomato paste (or 1 1/2 tbsp tomato paste and 1 tin of crushed tomatoes)
Water
Touch of oregano
1/2 tsp paprika and curry
3 eggs
grated Parmesan cheese
Fry diced onion in saucepan, add tomato paste or tomato puree, simmer for a little while, then add minced meat, oregano, paprika and curry. Once cooked add corned beef and finally 2 beaten eggs and cook for a further 2 minutes.

Prepare a dish with raw rice laid across the bottom. Add the sauce and top up with water. Stir the mixture to distribute evenly and add the salt, pepper, parmesan and 1 beaten egg, and mix gently again.

Place in 200oC oven and cook for 20-30 minutes. Once top looks slightly cooked take out dish and stir mixture again. Place back in the oven until evenly cooked through.
